Meal Prepping Sucks

It’s two o’clock in the morning and I have twenty minutes before heading into work.  Couldn’t sleep last night so I got ready earlier than usual and have some spare time.

Ran 3.30 miles yesterday in 36:20 which isn’t fantastic but it’s also the first time I’ve run in about a month so being able to just do the three miles was awesome.  I have a 5K coming up in Baltimore on the 19th of October and at least now I know I can run the entire distance.  I don’t care if other people walk 5Ks or whatever, but I prefer to run the entirety of the race.  I think my new running schedule is going to be Run, Leg Day, Rest, Arm Day, Run, Leg Day, etc.  That way I get at least one rest day in every three days.

For breakfast I had an El Monterrey breakfast burrito which, yes, is frozen, processed food and it only has 10g of protein which I KNOW I can beat if I would just make my own breakfast burritos.  So my new mission is to figure out how to make and freeze about seven or eight breakfast burritos that I can just micro really quickly in the morning before heading to work.  My current plan is:

  1. Egg whites
  2. Turkey sausage
  3. Cheese

And then I’ll make sure to have some salsa for dipping or whatever.  From what little research I’ve done, the major piece of advice is to make sure the ingredients that go inside the tortilla are as dry as possible.  No grease, no water, etc.  Let them settle so that the moisture evaporates and THEN fill the tortillas.  The other piece of advice is to heat the tortilla before wrapping it up so that it doesn’t tear.  I’d like to include some veggies like mushrooms or spinach but I’m not sure how well those things will hold up in the freezer.  Especially after they’re cooked.  If anyone has any experience with that, please let me know.  I’m interested.

In order to make dinner much easier I actually ordered six meals from Freshly this week.  So far I’ve eaten one – buffalo chicken.  It was tasty, I’ll admit.  And really high in protein (43g) which is why I chose it.  The rest of the meals were also chosen for their protein content because protein is king now.  It reheated well and didn’t turn rubbery which is also a plus.

I’ll let you know how the rest of them go but as of right now I’m definitely ordering another six meals next week.
